How hard is it to use Ubuntu Linux?

You won’t necessarily need programming experience. There are several flavours of Ubuntu using a different desktop env. The standard is Gnome but you can get Kubuntu that uses KDE. I went with the std Gnome. The windowing will be very familiar whichever you use but there are some difference key chords that you will need learn.

For your printer finding a driver for an unsupported printer is not usually a problem unless you have a very new printer or an unusual printer. You can search from within Ubuntu repositories.
